Not only does the island of Lesvos count with an olive oil production museum, but it's also unsurprisingly covered in olive groves. Archaeologists have recently brought to light fossils of olive leaves carbon-dated back 50 – 60 thousand years in the island. So it's safe to say that all this production history results in a lot of waste.

Greece-based design agency Koukos de Lab, founded by Irene Moutsoyiannis and Christos Ververis, turns discarded olive pits into an eco-material, koukoutsi, which is then turned into furniture.
